I love your breadcrumbs! I havent cooked with breadcrumbs for 10 years since I figured out it was the poisons in our foods, particularly wheat sprayed with pesticides and roundup, that was causing so much gut flora problems. I kind of went breadcrumb crazy, putting it in meatloaf, making eggplant parm, breaded cutlets, buttered crumbs on top of a summer squash souffle, yum! No side effects. Thank you for allowing me to enjoy the guilty pleasure of simple fried breaded eggplant again. No good substitute for breadcrumbs for that! God bless and keep you, mary
